Cilantro Pesto



  1. Coursely chop cilantro. Mince garlic. Dice tomatoes. Crush pine nuts. Mix everything put the pasta together. [I haven't measured the ingredients when I make this, but I use about equal amounts of cilantro and cheese, then add enough oil to make sort of a paste. Garlic and tomatoes are used in varying amounts depending how much everyone likes them. Pine nuts can either be crushed and mixed into the pesto or sprinkled on top as a garnish.]
  2. Cook pasta and top with pesto mixture.

Serving Ideas : Tomatoes can be left on the side if not everyone likes them. Chopped cucumbers are a nice addition in the summer.
