Apricot Oat Bars



  1. Preheat oven to 325 degrees F. Spray an 8-inch square baking pan with vegetable cooking spray.
  2. In a large bowl, combine all ingredients; mix to blend. Turn the mixture out into a prepared pan (it will be thick), and smooth evenly.
  3. Bake until the center is firm and the edges are lightly browned, about 25 minutes. Cool and cut into 2 inch squares.

Comment: This recipe can be made Vegan by making some substitutions. Use agave syrup in place of the honey. Instead of the nonfat yogurt, use soy yogurt. Use a mix of mashed banana and flax seed in place of the egg whites.
