Greek Orzo Salad
Ingredients
- 2 ounces orzo -- (1 cup cooked)
- 1/2 ounce feta cheese -- crumbled
- 4 small pitted black olives -- chopped
- 1 plum tomato, diced
- 2 teaspoons lemon juice
- 1/2 teaspoon olive oil (optional)
- 1/2 teaspoon water
- 1 teaspoon fresh parsley -- chopped
- 3 apricots
Directions
- Cook orzo. Chop apricots, olives, parsley, tomato. Crumble feta cheese.
- Mix all ingredients.
