Fresh Tomatoes with Fettucine
Ingredients
- 5 medium ripe tomatoes -- diced
- 1 medium red onion -- chopped
- 1 clove garlic -- minced
- 3/4 cup fresh basil leaves -- shredded
- 1 cup fresh parsley -- chopped
- 1/3 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 pound fettucine
- 1/4 cup black olives -- chopped
Directions
- Combine all ingredients except olives and fettucine.
- Cook fettucine. Combine with mixture from step #1. Garnish with black olives.
